Cheese Tart 

Recipe For Sweet Shortcrust Pastry
( This pastry is used for cheese tart, eggs tart, blueberry almond tarts, hazelnut tarts, fruit tart lets and etc)

Ingredients

125 grams          butter
63 grams            icing sugar
250 grams          all-purpose flour ( is the same as plain flour )
1 egg                  yolk
1/2 tsp                vanilla essence
1 tbsp                 water

Method

1. Sift flour and sugar into mixing bowl.
2. Rub butter into flour mixture until resembles coarse
3. Add in egg yolk, vanilla essence and water.
4. Shape dough into ball and refrigerate before using.

( A ) Cheese Tarts

Ingredients

250 grams         cream cheese
20 grams           butter
60 grams           fine granulated
1   nos               egg

Method

1. Beat cheese, butter and sugar together till fluffy, add in egg and beat till well mix.
2. Pour mixture onto baked tart shells. ( Filling is enough for 11 to 12 tart shells.)
3. Bake at 180 Celcius for 10 minutes.


Bingka Amboon

Ingredients

A     1 tbsp            instant yeast
        125 ml           water
        150 grams      bread flour
         Mix together and let it rise for 1 hour

B      250 grams      mixture  ( A ) [ some mixture (A) will stick to the bowl]
         5 nos              eggs
         325 grams      sugar
         1 tsp               salt
         a few drops of vanilla essence
         200 grams      tapioca flour
         450 grams      cream coconut ( extracted from 2 coconuts without adding water and boil to get cream)
         50 grams        melted butter

Method

1. Beat eggs, sugar, vanilla essence, salt and tapioca flour till well blended but not foamy.
2. Put in the proved dough and stir well.
3. Slowly add in coconut cream and lastly melted butter.
4. This mixture has to be kept for 2 to 3 hours. Stir properly before baking.
5. Place the mixture in little greased and floured cups.
6. Bake at the bottom rack of the oven at 200 Celcius for 10-15 minutes. When ready, grill the top until           golden brown.
