Lime

It is widely used as a condiment in Malay cuisine as well be drinking. Water squeezed lime can kill bacteria, cholera and typhoid. Black Pepper

Roasted Vegetable Terrine with Goat Cheese

Yield: 3- pound terrine; 18 to 20 servings ( 2 1/2 ounces each)

2 lb          zucchini ( about 3)
2 lb          yellow squash ( about 3)
11/4 lb     eggplant (about 3)
2 lb          tomatoes (about 4)
2 each      portobello mushrooms

                Marinade
1 oz/fl       olive oil
1 tbsp       Dijon mustard
1 tbsp       chopped flat-leaf parsley
1 tbsp       chopped chives
2 each       garlic cloves, minced, sauteed, and cooled
2 tbsp       chopped rosemary
2 tbsp       anchovy paste (about 4 fillets)
2 tbsp       honey
2 tbsp       salt
1/2 tsp      ground white pepper

8 oz/wt     fresh goat cheese
1 each      egg

* Cut all vegetables lengthwise into 1/8-inch-thick slices.
* Combine the marinade ingredients and add to the vegetables.
* Line sheet pans with oiled parchment and lay out the vegetables in a single layer.
*Dry in 200 Celsius oven for 1 hour, or until dry but not brittle. Remove from oven and cool.
* Mix the goat cheese with the egg to make the custard.
* Line a terrine mold with plastic wrap, leaving an overhang, and assemble the terrine by alternating layers of vegetables and the cheese mixture until the terrine is filled. Fold over the liner.
* Cover the terrine and poach in a 170 Celsius water bath in a 300 Celsius oven to an internal temperature of 145 Celsius, about 60 minutes.
* Remove the terrine from the water bath and allow it to cool slightly.
* Let the terrine rest at least overnight and up to  3 days under refrigeration, weighted with a 2-pound press plate if desired. The terrine is now ready to slice and serve, or wrap and hold under refrigeration for up to 7 days.

Ginger

Galangal


Galangal used in Malaysia and Indonesia as condiments and spices. It has a pungent taste like ginger and pepper. Chocolate Walnut Brownies

Ingredients
A.  185 grams butter
      280 grams cooking chocolate

B. 3 egg (size A)
    185 grams fine granulated sugar
    1 teaspoon vanilla essence

C. 185 grams all-purpose flour
     200 grams chopped walnuts

D. Chocolate Ganache
     100 grams double cream
     250 grams cooking chocolate
     ( Warm double cream over a double boiler, remove from heat and add in cooking chocolate)

Method

* Melt (A) with double boiler.
* Beat (B) till fluffy
* Add (A) to (B) and mix well. Add in (C).
* Bake at 180 Celsius for 1 hour using a 7'' x 11'' x 11/2'' lined and greased mould.
* Cool the brownies and pour ganache over. Decorate with walnuts as show in picture.



Cotton Cheese Cake
( Also know as Japanese or Sakura Cheese Cake)

Ingredients
140 grams fine granulated sugar
6 eggs whites
1/4 tsp cream of tartar

50 grams butter
250 grams cream cheese
6 eggs yolks
100 ml fresh milk
1 tbsp lemon juice

60 grams cake flour
20 grams corn flour

Method

* Melt cream cheese, butter and milk over a double boiler. Cool down, add in egg yolks, and lemon juice.
* Whisk egg whites with cream of tartar until slightly stiff. Mix in (1) cornflour, flour and stir until well combined.
* Pour batter into a greased and floured 9'' round mould.
* Steam-bake at 160 Celsius for 1 hour 10 minutes.

Unspeakable beauty of this earth . The first time he saw the world he does not understand anything of what is around him agitated . Looking at the sight of Mom and Dad say something and try to understand. Sometimes stomach feels hungry , but he was only able to produce tears to signal . Feel so helpless not being able to do anything for himself . He has requested to speak, walk, run and beyond.

He believes people need to talk to communicate with each other. People also need to move to meet the necessities of life . Therefore , he needs to understand the language of the surrounding while working to try to talk to his mother , father , sister, brother and a neighbor. Babies as small as he would have sense enough to know that high because he is still so empty and badly in need of a useful input for supply to survive.

Two years later he was able to more grandiose speak, have teeth to eat a variety of dishes and many more can be done only sad he could only walk when reaching the age of two years because of been dropped from their homes and resulted in his becoming weaker. But with the support of his family eventually recovered to normal. As a small child is not a lot of memories that can be stored into his mind because at this time he just wants to enjoy and continue to enjoy the pleasures of life . Normally ... kids do not need to think about how to make a living and where want to get the food right? .... All he knew, hunger back home and ask their parents ....

At the age of four he was already beginning to learn to kick the ball. Wooden play the game that is at his favorite tradition. Run around with a friend. Sometimes went along with his friends more adult games more extreme. But in fact he loves to follow his father into the cornfield and nut orchards of cultivated land. Beautiful memories of when he was with his dad enjoy giant grilled corn. He was so impressed with the size of the corn is so great. He felt to be saved for the jewelry. ''Daun Kesum''


Kesum leaves smell like coriander blended with citrus. The leaves are also known as Vietnamese coriander leaves and a somewhat nutty flavor. In Malaysia kesum leaves used as decoration for dishes such as laksa. Kesum leaf decoration is used to treat digestive problems, removes dandruff and as a drink after childbirth. Kesum leaves are also rich in beta carotene, vitamin A, vitamin C and minerals such as potassium, calcium and phosphorus.



Curry Leaves

Curry leaf tree has nothing to do with curry or curry powder, it just leaves added. Used in some curry just to give a sense of the unique slices. Whether dried or fresh curry leaves are the first ingredients are included in oil before cooking. Smell and taste are very prominent. Curry leaves will be used when fresh. Escabeche of Tuna 

Yield : 10 servings

30 oz/wt              tuna steak
To taste               salt
To taste               ground black pepper
4 tbsp                  olive oil
3 tbsp                  lime juice
3 oz/wt                small-dice tomato concasse
1/2 oz/wt             small-dice red onion
1/2 each               Serrano Chile, minced
1 each                  scallion, slice thin on bias
1/2 tsp                 minced garlic
1 tsp                    chopped cilantro

* Cut the tuna into 1-inch cubes or 3-ounce steaks. Season with salt and pepper, rub with 2 table spoons of the oil, and sear in a hot, well-seasoned pan. ( It should be cooked ''black and blue''- colored on the exterior but still extremely rare. )
* Remove the tuna and chill thoroughly.
* To make a marinade, mix the remaining olive oil with the lime juice, tomato, onion, Chile, scallion, garlic, and cilantro.
* Pour the marinade over the tuna and turn or gently toss the coat evenly. Marinate at least 12 hours or overnight before serving.

Presentation Ideas:  This dish can be served with a small salad as an appertizer, used to fill cucumber cups as an hors d'oeuvre, or served as part of an antipasti offering.

Amazing Life Story Eps 1

Traveller's street people struggle never be accessible to his weathered an amazing journey and outside the box thinking of the common man. This is a true story that I will disassemble according to the actual experience of people who pass through.

He wanted to share this experience to anyone who is willing to make viewing life in the future. Indeed, the story of his experience is valuable to me because it contains the lessons and real life examples of very high value price.

His story will be narrated from episode to episode. Hope that we appreciate the life of a child for street riding is very impressive and not everyone can afford the journey through life like this ...

In January 19, In Year 1981, Monday at 5.35am a baby was born on a farm located on the island of Borneo. Farm is located quite far from the city centre being approximately the distance of 160km. No electricity but only lamps "Pelita" that accompany this little baby. Crying does not cast anyone would know whether the baby is happy in tears as successful birth into this world full of colourful life. Maybe this baby felt something so big carries to the next life.

As we have seen in this era of baby clothes are very comfortable once with designer diapers costing tens of dollars or even hundreds of dollars caressing the body. But these babies are just lined with cloth diapers worn inherited by a brother and sister of the first born...

But none can match the unspeakable grace of her own mother's milk that was delivered to the world. As time went on, he felt a change in himself. Dressing

1 cup          Mayonnaise
1 cup          Sour cream
1 tsp           Salt
1 / 2 tsp      Ground black pepper
To taste      lemon juice

1 stalk        Celery, peeled, cut into medium dice
1 cup          Rough-chopped toasted walnuts

* Cut the apple into medium dice.
* Mix together all the dressing ingredients and season to taste. Fold in apples, celery, and walnuts.
* The salad is ready to served now, or it may be held, covered, under refrigeration for up to 8 hours. This salad should be made the same day it is to be served.


Grilled Chicken Sandwich with Pancetta, Arugula, and Aioli

Yield : 10 Sandwich

2 1/2 oz/fl                olive oil
2 1/2 oz/wt              garlic, sliced ( 9 cloves )
1 tbsp                      fresh thyme
3 tbsp                      lemon zest ( 2 lemon )
Pinch                       salt
Pinch                       ground black pepper
10 each                   boneless chicken breast ( 4 oz/wt each )
30 slices                  Pancetta, 1/8- inch thick
20 slices                  sourdough bread
5 oz/fl                     Aioli
6 oz/wt                   arugula, washed and dried ( 1-2 bunches )

* Combine the oil, garlic, thyme, lemon zest, and pepper.
* Pound the chicken  breasts to an even thickness and marinate in the oil mixture overnight.
* Preheat the grill, and the oven to an even 350 Celcius. Lay the pancetta out on a sheet pan and place in the oven until crisp.
* Sandwich Assembly: For each sandwich, lightly brush two slices of bread with the olive oil mixture and grill over moderate heat until golden and crispy on the outside but soft on the inside. Reserve. Grill a chicken breast until cooked though.
* Spread some aioli on the grilled bread. Place a few leaves of arugula, 3 slice of crispy pancetta and the chicken breast on one side of the bread. Top with the other half of bread and slice diagonally.
