ANTI PASTO – Italian cold appetizer.

CHATEAUBRIAND - Double steak cut from the center of the beef fillet.

ETUVER - To cook slowly under cover with minimum of added liqiud.

FONDANT - Thick liqiud sugar icing.

GOUJON - Meat or fish cut into small strips roughly of finger size.

MONTER - The beating of cream, egg white, etc.

PICATTA - Small veal cutlets.

ROYALE - Type of custard cut into various shapes and used as a garnish.

SAVARIN - Light yeast dough usually baked in ring mold.
