SHEPHERD'S PIE

Ingredients For Bottom & Top
1 kilo potatoes
2 eggs
1 tbsp butter
1/2 tsp white pepper
1 tsp nutmeg
1 tsp salt

Method
- Steam the potatoes and make puree. Blend it together with the seasoning.
- Place into aluminium pie tin and put in the chicken pie fillings. Use nozzle no.22 to pipe on top.
- Bake at 175 C for 35 - 40 minutes. After that grill the top.
- Serve with brown sauce.

Chicken Stock For Brown Sauce
( Boil the ingredients for 1/2 hour or more )
1 chicken bone
1 piece fresh celery ( cut into big pieces )
1 carrot ( cut into 4 - 5 pieces )
1 big onions ( cut into 4 pieces )
1 tbsp black pepper ( crushed )
1600 ml water

Brown Sauce
( This sauce could be used for chicken or lamb chop )
Ingredients
120 grams butter
2 pips onion ( chopped )
1 pip garlic ( chopped )
120 grams plain flour
1500 ml chicken stock
1/2 tbsp tomato paste
1 tsp black sauce
1 1/4 tsp salt

Method
- In a wok fry onions and garlic with butter until fragrant.
- Add in flour, follow by chicken stock, tomato paste, black sauce and salt.
