CARROT MUFFIN
Ingredients
125 grams butter
180 grams fine granulated sugar
3 eggs (size c)
250 grams plain flour
1 tsp baking soda
2 tsp double action baking powder
100 grams grated carrot
( make 12 muffins )
Method
1 . Cream sugar and butter till fluffy. Add in eggs and continue creaming for a few second.
2 . Add in sifted flour, baking soda, baking powder and milk. Lastly add in carrot.
3 . Pipe onto paper cups placed in muffin moulds.
4 . Bake at 200 C for 25 minutes.
