Amazing Recipes Eps 10


DANISH  PASTRY

Ingredients

500 grams bread flour
75 grams fine granulated sugar
5 grams salt
15 grams milk powder
10 grams instant yeast
100 grams eggs
155 ml cold water
25 grams shortening
250 grams croissant margarine

Method

+ Mix all the ingredients together and beat at slow speed for a few minutes. ( do not over mix )
+ Roll the dough, cover with plastic bag and rest for 30 minutes in the freezer.
+ Wrap the dough with croissant margarine, rotate dough by 90 and  roll out again.
+ Give the dough one single turn and allow to rest in freezer for another 30 minute.
+ Give two single turns, each turn gives a 30 minutes rest. 
+ Keep the dough in the fridge for more than 2 hours or overnight.
+ Roll out dough to 1/2 cm thickness and cut as shown.
+ Arrange in greased tray cover with plastic and let it rise for 1 1/2 hours or more.
+ Bake at 200 C for 20 minutes.
