SANSRIVAL
150 grams fine granulated sugar
8 eggs whites
1/2 tsp cream of tartar
70 grams coarsely chopped cashew nuts
Method
- Cream sugar, egg whites and cream of tartar until fluffy.
- Fold in chopped cashew nuts.
- Bake in 4 pans measuring 9'' x 1/2'' pans at 160 C for 50-55 minutes.
Icing For The Meringue
6 eggs yolks
250 grams butter
1/2 cup syrup-boil 1/2 cup sugar with 1/4 cup water.
70 grams toasted cashew nuts ( chopped )
Method
- Cream butter till fluffy and leaves aside.
- Cream egg yolks until fluffy and add in boiled sugar. Mix well and allow to cool.
- Add in beaten butter.
- Sandwich the meringue with butter cream and top with nuts for each layer.
